Parmesan Truffle Fries are one of my favorite treats to order when I go to a restaurant! They have the most amazing flavor and are an upgrade to any meal! I love how simple they are to make at home when a craving strikes and my boys now love them too!
For the best fries, make sure to use a good truffle oil -- you'll be so glad to have it on hand. Truffles are a type of mushroom and their infusion into the oil gives it incredible umami flavor. Truffle oil can be made from white truffles or black truffles. You can choose whichever type you prefer for this recipe.
You can serve these crispy fries with nearly any meal. While I love them with brunch (of course!) they're also a great way to elevate burger night. And since they're so easy to make, you can have them any day of the week.

- Russet potatoes - You can use any variety of potato you prefer but we’ve found these have the best texture and flavor for making truffle french fries.
- Olive oil - Use your favorite brand of olive oil and make sure to coat all sides of the fries.
- Salt and pepper - You may want to adjust the measurement to taste when you add seasoning after baking. If you want more flavorful fries, use a high-quality salt or one that’s infused with flavor.
- Truffle oil - If this is your first time using truffle oil, you may want to drizzle a little at first and then adjust the amount of truffle flavor to taste. You can use white truffle oil or black truffle oil.
- Freshly grated parmesan cheese - Freshly grated cheese always tastes best so it’s preferable to use it instead of a packaged version. Just use your microplane or cheese grater to do it while the fries are cooking.
- Chopped parsley - Roughly chop the parsley before adding it to the fries. It adds brightness in terms of the flavor and the appearance of the fries.

Ingredients
- 4 russet potatoes peeled and cut into thin even french fries
- 1 tablespoon olive oil
- salt and pepper to taste
- 1 tablespoon truffle oil white or back truffle oil to taste
- 1 -2 tablespoons parsley finely chopped
- ¼ cup parmesan cheese freshly grated
- aioli *optional, for serving
Instructions
- Using a vegetable peeler or paring knife, peel the potatoes. Note: if you prefer, you can leave the potato skins on.
- Next, slice the peeled potatoes into thin long strips. Be sure that the fries are uniform in size so that they cook easily.
- Fill a large bowl with cold water. Place the fries into the large mixing bowl filled with water and allow them to soak for the recommended time (30 minutes). This step is necessary to remove some of the excess starch so that the fries cook evenly and come out crispy.
- Once the fries are finished soaking, use paper towels or a clean kitchen towel to dry them.
- Transfer the dried fries to the prepared sheet pan with parchment paper.
- Drizzle olive oil over top of the fries and toss to ensure that they are completely coated.
- After tossing, arrange fries in a single layer on the baking sheet.
- Place fries in the preheated oven. Bake for half of the cooking time (15 minutes). Then, use a spatula to flip the fries and return them to the oven to finish cooking.
- When the fries are golden brown, remove them from the oven and season immediately with salt and pepper.Then, drizzle a little truffle oil over top of the fries.
- Garnish with parmesan and fresh parsley and serve immediately with aioli or your preferred dipping sauce.
