    This Truffle Aioli is a delicious and luxurious homemade earthy truffle garlic mayo. The perfect elevated dipping sauce for french fries!

    I love french fries, who doesn't -- and I'm always looking for new dipping sauces and this truffle aioli recipe is the perfect companion! I pair this aioli as a dip with my Parmesan Truffle Fries and they disappear in seconds! It is so fancy and elegant to serve to guests but so easy to make it will become a regular go-to for entertaining and date night in!

    What are truffles?

    If you are new to truffles you may be wondering what they are and why they are so expensive! Truffles are a rare fungi that grow underground under very specific climate conditions, they are difficult to cultivate and harvest and are mostly found in Italy. Due to their scarcity, they carry a hefty price tag. Their unique and earthy flavor makes them a gourmet ingredient that elevates dishes like pasta, potatoes, eggs, and risotto. Products infused with their flavor like truffle oil are more affordable and accessible for everyone to enjoy!

    • Truffles are a culinary delicacy and due to their rarity, they are expensive. A small amount of infused truffle oil in this tasty aioli makes it satisfying and affordable!

    Ingredient Notes

    Mayonnaise - traditional aioli recipes often use egg yolk for richness but this easy take on aioli skips that step with the use of mayonnaise. Use your favorite variety, with the best quality ingredients. I like a mayonnaise that includes olive oil vs. canola oil.

    Dijon Mustard - I love this one . Use your favorite but do not substitute yellow mustard as it will not deliver the same flavor profile.

    Natural Truffle Oil- I use white truffle oil as I prefer the milder truffle flavor but feel free to experiment with black truffle oil for a more robust punch. Fresh truffles and truffle products can sometimes be difficult to find in regular grocery stores but it's readily available in gourmet specialty grocers and online.

    Fresh Lemon Juice - use freshly squeezed lemon juice for this recipe not bottled juice from concentrate.

    Garlic Powder or Fresh Garlic- I like garlic powder as it's quick and easy and delivers a lot of flavor, but if you love fresh garlic feel free to substitute and use a food processor to blend the ingredients to avoid garlic chunks and yield a smooth velvety consistency to your aioli.

    Salt and Black Pepper - to taste.

    • 1 cup mayonnaise
    • 1 tablespoon dijon mustard
    • 1 tablespoon white truffle oil you can use black truffle oil for bolder flavor.
    • 1 tablespoon lemon juice fresh squeezed
    • ½ teaspoon garlic powder or 1 clove fresh garlic, crushed

      Yum! This was delicious but it didn't last long! We used it as a dip and a spread for sandwiches. I used white truffle oil and the taste was perfect. Will make again.
