I love making this Blueberry Stuffed French Toast for entertaining because it is so pretty, but it's also so delicious it's like having blueberry cheesecake for breakfast. My guys love blueberries, especially the blueberry sauce in this recipe, so this is also a favorite make-ahead recipe for Sunday Brunch. It's also a favorite of our breakfast recipes for Christmas morning. It can be prepped the night before and popped in the oven the next morning, which is a lifesaver for a busy mom of 4! This method makes it turn our more like a French toast casserole. Everyone will love waking up to the smell of yummy blueberries and sweet cinnamon baking! Just like this Blueberry Cobbler Bubble-up!

    Ingredient Notes

Ingredients for blueberry french toast on counter.
    • Blueberries: I use frozen blueberries because I always have them on hand but feel free to use fresh berries when they are in season.
    • Maple Syrup: adds a natural sweetness to the blueberry filling. You can also use brown sugar if you prefer.
    • Lemon Juice: use fresh lemon juice to add brightness to the dish and balance the sweetness.
    • Cornstarch: thickens the blueberry filling.
    • Salt: for balancing and enhancing flavors.
    • Eggs: use large eggs for this recipe.
    • Milk: I use 2% milk but feel free to use the milk of your choice.
    • Vanilla Extract: adds delicious flavor and aroma.
    • Cinnamon : infuses the French toast with classic warm, cozy spice.
    • French Baguette: baguettes absorb the French toast custard and have crispy edges after baking!
    • Cream Cheese: ensure it's softened for easy spreading. I love purchasing whipped cream cheese for even easier prep!
    • Powdered Sugar: slightly sweetens the cream cheese and provides cheesecake-type element to the dish.

    Frequently Asked Questions

What is the trick to making good French Toast?

    1. Use thick-cut bread, thick slices of bread, will absorb the custard mixture without becoming too soggy!
    2. Don't oversoak, dip the bread slices into the custard mixture, on each side until evenly coated but not oversoaked.
    3. Cook over medium heat until golden and crisp on the edges and cooked through in the middle not soggy or wet.

How do you keep French Toast from getting soggy?

    1. Use a day or two old bread. You need a firmer texture to ensure your French toast is not soggy when soaked in the custard! If your bread is fresh you can lightly toast it before soaking.
    2. Don't oversoak your bread slices into the custard.
    3. Cook through on medium heat.
    4. Use a wire rack to place cooked French Toast to allow any excess moisture to evaporate, helping it to stay crispy!

How do you know when French Toast is done?

French Toast is ready when it's golden brown on both sides and cooked through in the center. If it feels firm and springs back slightly when pressed, it's done cooking. If it feels wet or soggy, it needs more time to cook.
You can always check the internal temperature using a food thermometer. The internal temperature of the French Toast should be 160°F (71°C).

    Expert Tipscropped-cropped-ALL-YOU-NEED-IS-BRUNCH-favicon-512X512.png

    • Make Ahead: For a stress-free morning assemble the stuffed French toast the night before. (If you like your baked French toast to have a bread pudding-like texture you can soak it overnight. If not you can add the custard in the morning while the oven is preheating). Refrigerate the assembled dish and bake it fresh in the morning!
    • Thick-Cut Bread: Using a quality French baguette is crucial for a custard-like interior and a golden, crispy exterior. If your bread is fresh you may want to "dry it" by lightly toasting the slices before soaking to avoid soggy French toast.
    • Soften Cream Cheese: For easy spreading, soften at room temperature or use the microwave in 10 second increments. *HOT TIP- use whipped cream cheese and no need to soften!

    Recipe Variations

    • Experiment with different fruit compotes in the filling like strawberry, raspberry, or peach.
    • Top with a layer of chopped nuts (like sliced almonds or chopped pecans) to the cream cheese filling or the top for extra texture.
    • Use lemon zest or orange zest in the blueberry filling or orange juice in the custard for extra citrusy flavor.

    Recipe Substitutions

    • Try different types of bread, like cinnamon swirl, French bread, challah bread, or even whole-grain varieties.
    • If you can find blueberry cream cheese, feel free to use that in place of plain cream cheese.
    • Make it vegan by using plant-based alternatives for eggs, milk, and cream cheese.
    • Try a drizzle of honey or agave as a swap for maple syrup if desired.

    Storage Tips

    • This recipe is best enjoyed the day it is baked. Store any leftover French Toast in an airtight container in the refrigerator for up to two days.
    • Reheat in the microwave or in the oven or toaster oven to maintain the crispy exterior.
