    This homemade Pumpkin Spice Syrup is what cozy fall mornings are made of! It’s rich, sweet, and warmly spiced. With just 20 minutes and pantry staples, you’ll have a velvety-smooth syrup perfect for lattes, iced coffees, and even a drizzle over pancakes or French toast!

    This recipe was inspired by one of my son’s Starbucks obsession, he always loves trying things at Starbucks as a treat. I was curious about the Pumpkin Spice Lattes  that everyone always raves about, so I decided to try one and then recreate that flavor at home on a budget! This batch makes enough to last the week and turns even the sleepiest Monday into a little fall celebration! Bonus: it makes your kitchen smell like a fall festival that's so warm and cozy! You have to try my Pumpkin Spice Latte using this syrup!

    Ingredient Notes

    Ingredients to make pumpkin spice latte syrup.
    • Water
    • Sugar: We used granulated sugar, but you can try brown sugar or even coconut sugar.
    • Pumpkin Purée: Use 100% pure pumpkin, not pumpkin pie filling.
    • Cinnamon, Ginger, Nutmeg, and optional Cloves: This cozy spice blend is what makes the signature fall flavor profile.
    • Vanilla Extract

    How to Make Pumpkin Spice Syrup

    • Step 1: Dissolve the water and sugar over medium heat in a small saucepan.

    • Step 2: Add pumpkin puree and spices to the sugar mixture.

    • Step 3: Whisk and allow to simmer for 5 - 7 minutes.

    • Step 4: Remove from heat and add vanilla.

    Straining pumpkin syrup with sieve.
    • Step 6: Strain for the best coffee syrup consistency! Transfer to a pretty bottle when cool and enjoy.

    • The key to that a silky coffeehouse texture syrup with no pumpkin bits is definitely straining the syrup so don't skip this step!
    • Make a double batch, you’ll want this on hand for pancakes, French toast, or even drizzling over oatmeal. Having extra for Sunday Brunch with friends and family will be another added bonus!
    • Use a funnel when pouring into a bottle or syrup jar for clean storage.

    Recipe Variations

    • Stir into iced chai or cold brew for perfect pumpkin spiced flavor.
    • Add a splash to warm milk for a caffeine-free pumpkin steamer
    • Whisk into maple syrup for pumpkin spice pancake topping

    Recipe Substitutions

    • Swap brown sugar for the granulated sugar for deeper, caramel flavor.

    Store your homemade pumpkin syrup in a clean, airtight jar or bottle in the fridge for up to 1 week. Shake before each use to reincorporate the spices. You can also freeze it in an ice cube tray and pop a cube into warm milk or coffee as needed!

    Ingredients
      

    • 1 cup water
    • 1 cup granulated sugar
    • 3 tablespoon pumpkin purée * pumpkin pie not filling
    • 1 teaspoon ground cinnamon
    • ½ teaspoon ground ginger
    • ¼ teaspoon ground nutmeg
    • ¼ teaspoon ground cloves *optional
    • 1 teaspoon pure vanilla extract

    Instructions
     

    • In a small saucepan, combine water and sugar over medium heat. Stir until sugar dissolves.
    • Whisk in pumpkin purée and spices.
    • Simmer gently for 5–7 minutes, stirring occasionally.
    • Remove from heat and stir in vanilla.
