    • Gin - I like the frutiness of Bombay Saphirre in this recipe but you can use your favorite gin.
    • Sugar Syrup - boil equal parts of water and sugar allow it to cool and then you can store it in the refrigerator and use it for other cocktails whenever you need it!
    • Blueberries - you can use fresh or frozen!
    • Aquafaba - the liquid from a can of chickpeas is perfect for making a sour vegan, as it replaces the egg whites in a traditional sour.

    • 1. Add the blueberries, lemon juice to a cocktail shaker.
    • 2. Add simple syrup.

    What is aquafaba?

    Aquafaba is the liquid from an undrained can of chickpeas. It is developed from soaking or cooking beans in water for a period of time. It can be used as a substitute in vegan cooking for egg whites and can also be used in cocktails!

    Does aquafaba work in cocktails?

    Yes! Aquafaba is an excellent substitute for egg whites in cocktails, even if you are not vegan it helps to remove the risk of using raw eggs! Like egg whites, aquafaba creates a beautiful velvety texture to cocktails with a light layered foam. Aquafaba can even be flavored.

    How do you muddle blueberries?

    When preparing blueberries for a cocktail you can muddle them by placing them in the bottom of a cocktail shaker and pressing and twisting them with a muddler to release the flavors and juices.

    Expert Tips

    • You can use fresh or frozen blueberries for this recipe. If using frozen allow them to defrost. Frozen wild blueberries are delicious in this recipe.
    • Be sure to use freshly squeezed lemon juice, not bottled juice which will be too sour.
    • If you don't need to make this drink vegan you can substitute pasteurized egg whites for the aquafaba. I prefer not to worry about the safety of the eggs so I love the aquafaba!

    Equipment

    • Cocktail shaker
    • Muddler

    Ingredients
      

    • ½ cup blueberries (defrost frozen blueberries)
    • 2 tablespoons lemon juice (freshly squeezed)
    • 1 tablespoon simple syrup
    • 1 tablespoon aquafaba (liquid from can of chickpeas)
    • 1.5 ounces gin
    • ice
    • lemon and blueberries for garnish

    Instructions
     

    • Add blueberries,lemon juice and simple syrup to a cocktail shaker.
    • Muddle the blueberries by pressing and twisting with a muddler.
    • Add the gin and the aquafaba to the muddled blueberries.
    • Dry shake the ingredients.
    • Fill the cocktail shaker with ice and shake again. Strain into a glass and garnish with blueberries and lemon if desired and enjoy!
