Ingredients
  

Custard Ingredients:

  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • Pinch salt
  • 1 French baguette cut into 16 1 inch thick slices

Cream Cheese Filling

  • 4 ounces cream cheese softened
  • 2 tablespoons powdered sugar
  • maple syrup for serving

Instructions
 

  • Prepare the Blueberry Filling
  • In a shallow bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and a pinch of salt until well combined.

Prepare the Cream Cheese Filling:

  • In a small bowl, mix together the softened cream cheese and powdered sugar until smooth.

Assemble the Stuffed French Toast:

  • Slice the baguette into 16 pieces
  • Lay 8 slices of bread onto a lightly greased baking dish.
  • Spread a generous layer of the cream cheese mixture on half of them.
  • Spoon a dollop of the blueberry filling on top of the cream cheese layer.
  • Top with the remaining slices of bread to create "sandwiches."
  • Preheat the oven to 350 degrees.
  • Pour the egg mixture egg mixture over the French Toast, making sure to coat both sides thoroughly. You can use tongs to carefully flip sandwiches in the custard to ensure they are evenly coated.
  • Bake for 35-40 minutes until golden and cooked through in the middle.

Notes

  • Make Ahead: For a stress-free morning assemble the stuffed French toast the night before. (If you like your baked French toast to have a bread pudding-like texture you can soak it overnight. If not you can add the custard in the morning while the oven is preheating). Refrigerate the assembled dish and bake it fresh in the morning!
  • Thick-Cut Bread: Using a quality French baguette is crucial for a custard-like interior and a golden, crispy exterior. If your bread is fresh you may want to "dry it" by lightly toasting the slices before soaking to avoid soggy French toast.
  • Soften Cream Cheese: For easy spreading, soften at room temperature or use the microwave in 10 second increments. *HOT TIP- use whipped cream cheese and no need to soften!
