This prime rib sandwich recipe is perfect for using up holiday leftovers! Simple ingredients make it easy to whip up for a delicious lunch!
One of my favorite leftover prime rib recipes is this prime rib sandwich also known as a French dip (when you add some melted provolone cheese)! It makes the perfect lunch after a busy holiday like Christmas when you are tired of cooking and want a quick and easy meal! My boys love dipping the sandwiches in au jus and I love mine smothered in horseradish mayo and sauteed mushrooms!

Ingredient Notes
- French baguette - or artisan bread of your choice. I love a crusty bread for soaking up the au jus!
- Mayonaise - use whatever kind is your favorite!
- Prepared Horseradish - this will be mixed with the mayo to make a yummy horseradish cream!
- Leftover Prime Rib - thinly sliced. This is my favorite Garlic Butter Prime Rib recipe with Au Jus!
- Sautéed Mushrooms - optional but such a delicious add-on. You could also substitute caramelized onions if you prefer. You can also turn it into a French Dip with melted provolone!
- Fresh Parsley - I love the color and earthiness of this optional garnish.
How to make a Prime Rib Sandwich?
- Slice baguette and combine horseradish and mayonaise.
- Mix horseradish sauce together.
- Spread the horseradish sauce on the bread and then pile on the prime rib.
- Add on any other desired toppings and enjoy with au jus for dipping!
Frequently Asked Questions
If you want your prime rib warm in your sandwich you can reheat it carefully in a 200-degree oven wrapped in foil in a covered baking dish for about 10 minutes. Whatever you do...DO NOT microwave your prime rib! You will ruin the taste and texture. Trust me... it will be a rubbery disaster! You have spent the money on a premium piece of meat and the time to ensure it's cooked to perfection don't take any chances! I prefer instead to serve the prime rib at room temperature in my sandwiches with piping hot au jus for dipping!
Au jus is very simple to throw together! Reserve 4 tablespoons of the fat drippings from your roast (you can also use butter) and add it to a saucepan, add a clove or two of minced garlic, and cook for about 3 minutes then whisk in 2 tablespoons of flour. Cook until browned and thickened for another 2 minutes. Next, add in 2 cups of beef broth and ¼ cup of red wine if you like, and let it simmer and reduce for about 15 minutes, season with salt and pepper to taste, and serve hot!
Leftover prime rib can be kept safely for 3-4 days in the refrigerator stored in an airtight container. Leftovers can be frozen but I don't recommend it. Try to purchase the size that your family can consume and factor in the number of servings of leftovers that you would like for sandwiches as the meat is best the next day for this recipe. Reheating is always risky in changing the flavor and texture.

Ingredients
- 1 french baguette
- 4 tablespoons mayonnaise
- 1 tablespoon prepared horseradish
- 1 pound leftover prime rib thinly sliced
- sauteed mushrooms optional
- parsley for garnish
- leftover au jus
Instructions
- Slice baguette evenly to make 4 sandwiches.
