Lucky Charms Rice Krispie Treats

Finished with optional white chocolate drizzle and rainbow sprinkles, they’re perfect for St. Patrick’s Day, birthday parties, or anytime you want a whimsical sweet treat.

Ingredients
  

  • 6 tablespoons salted butter plus extra for greasing
  • 1 10 oz bag mini marshmallows (about 6 cups), divided
  • ½ teaspoon pure vanilla extract
  • Pinch of sea salt
  • 4 cups Lucky Charms cereal
  • 2 cups Rice Krispies cereal
  • ¼ cup melted white chocolate optional, for drizzle
  • Rainbow sprinkles optional
  • Extra Lucky Charms marshmallows for topping optional

Instructions
 

  • Lightly grease a 9x9-inch pan and line it with parchment paper.
  • In a large pot over medium heat, melt the butter. Add 5 cups of marshmallows and stir constantly until fully melted and smooth.
  • Stir in the vanilla extract and a pinch of sea salt.
  • Remove from heat. Let the mixture cool slightly, then fold in the Lucky Charms and Rice Krispies cereal.
  • Gently fold in the remaining 1 cup of marshmallows.
  • Transfer the mixture to the prepared pan and lightly press into an even layer. Do not compact too firmly.
  • If desired, drizzle melted white chocolate over the top and decorate with rainbow sprinkles.
  • Press extra Lucky Charms marshmallows on top.
  • Let the treats set for 30 minutes, then slice into squares and serve.

Notes

  • Stir constantly while melting to prevent the butter from separating. If it starts to split, whisk vigorously until smooth.
  • Make sure the marshmallow mixture is fully smooth before adding cereal. Avoid folding cereal into a greasy mixture.
  • Let the melted marshmallow mixture cool slightly before adding Lucky Charms to help prevent color bleed from the marshmallows.
  • Do not press the mixture too firmly into the pan. Light pressure keeps them soft and chewy.
  • For clean slices, lightly butter your knife before cutting.
