Ingredients
  

  • 1 cup frozen blueberries
  • 2 tablespoons maple syrup
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch
  • Pinch of salt

Instructions
 

  • In a small saucepan, mix the frozen blueberries, maple syrup, lemon juice, cornstarch, and a pinch of salt.
  • Stir occasionally and let the mixture cook on medium heat until it thickens, and the blueberries break down to to your desired texture.
  • Once thickened, set aside to cool. Spoon it over your favorite brunch dishes!

Allow the compote to simmer and thicken gradually for a richer texture on medium-low heat. If the heat is too high the compote will burn.
Adjust to your desired taste add more maple syrup for a sweeter compote and more lemon juice for more tang.
Make this compote ahead and store it in the refrigerator for easier entertaining.
