Ingredients

  • 2 cups all-purpose flour
  • cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup cold unsalted butter cut into small cubes
  • 1 cup finely chopped peeled apple such as Honeycrisp or Granny Smith
  • ½ cup heavy cream plus more for brushing
  • 1 large egg
  • 1 teaspoon vanilla extract

Optional Glaze

  • ½ cup powdered sugar
  • 1 teaspoon milk
  • 1 tablespoon vanilla extract

Instructions

  • Set your oven to 400°F and prepare a baking sheet by lining it with parchment paper.
  • In a large mixing bowl, combine the flour, sugar, baking powder, cinnamon, and salt.
  • Work in the cold butter using a pastry cutter (or your fingertips) until the mixture looks like coarse crumbs.
  • Fold in the diced apples so they’re evenly distributed.
  • In a small bowl, whisk together the cream, egg, and vanilla, then gently add this mixture to the dry ingredients. Stir only until everything just comes together. Avoid overmixing!
  • Turn the dough out onto a lightly floured surface. Shape into a round, about 8 inches across and ¾-inch thick.
  • Cut the round into 8 wedges and arrange them on your prepared baking sheet. Brush the tops with cream.
  • Bake for 15–18 minutes, or until the scones are golden and fragrant. Let them cool slightly before serving.
  • For the glaze: whisk the powdered sugar, milk, and vanilla together until smooth, then drizzle over the cooled scones.

Notes

  • Keep your butter cold for extra flakiness.
  • Don't overmix the dough.
  • Cut apples small so they bake evenly.
  • Glaze the scones once they have cooled to avoid melting.
