These cozy Apple Scones are the ultimate fall brunch treat! Buttery, flaky, and packed with juicy chunks of fresh apple, spicy cinnamon and finished with a sweet vanilla glaze!
1cupfinely chopped peeled applesuch as Honeycrisp or Granny Smith
½cupheavy creamplus more for brushing
1large egg
1teaspoonvanilla extract
Optional Glaze
½cuppowdered sugar
1teaspoonmilk
1tablespoonvanilla extract
Instructions
Set your oven to 400°F and prepare a baking sheet by lining it with parchment paper.
In a large mixing bowl, combine the flour, sugar, baking powder, cinnamon, and salt.
Work in the cold butter using a pastry cutter (or your fingertips) until the mixture looks like coarse crumbs.
Fold in the diced apples so they’re evenly distributed.
In a small bowl, whisk together the cream, egg, and vanilla, then gently add this mixture to the dry ingredients. Stir only until everything just comes together. Avoid overmixing!
Turn the dough out onto a lightly floured surface. Shape into a round, about 8 inches across and ¾-inch thick.
Cut the round into 8 wedges and arrange them on your prepared baking sheet. Brush the tops with cream.
Bake for 15–18 minutes, or until the scones are golden and fragrant. Let them cool slightly before serving.
For the glaze: whisk the powdered sugar, milk, and vanilla together until smooth, then drizzle over the cooled scones.
Notes
Keep your butter cold for extra flakiness.
Don't overmix the dough.
Cut apples small so they bake evenly.
Glaze the scones once they have cooled to avoid melting.
