Prepare and refrigerate the Roasted Sesame Ginger Dressing for at least 15 minutes to allow the flavors to meld.
Slice cucumbers.
In a large bowl toss broccoli slaw and coleslaw until combined.
Add cucumbers to the top. If you are serving family style you can dress the entire bowl with dressing (be sure to shake again before pouring and tossing). Alternatively, side salads can be individually dressed. Garnish with fresh parsley if desired. Enjoy!

You can add additional toppings like slivered almonds, crispy ramen noodles, green onions or even experiment with other herbs like basil or cilantro!
Dress the salad and consume it immediately after preparing or the salad ingredients will become soggy. Undressed salad can be kept in an air tight container for up to 4 days. Dressing can be kept refrigerated in a mason jar for up to 7 days.
This recipe makes a great meal prep salad for lunch. Divide dry salad into 4 containers. Add a protein of choice on the side of each salad. Divide dressing into 4 single serve salad dressing containers.
